Sourdough Starter

  • 2 cups filtered water (chlorine and other chemicals can kill your yeast)
  • 1 potato, quartered
  • 2 cups flour of choice (unbleached white, whole wheat, rye, etc)
  • 2 Tbsp Honey
  1. Pour water into a pot.
  2. Add potato and bring to a boil. Cook for 15 minutes.
  3. Cool until lukewarm.
  4. Add honey and flour, stirring until wet dough is formed.
  5. Let set at room temperature for 2-3 days, feeding with ½ flour, ¼ water every 12 hours.
