Heat olive or coconut oil in a large skillet (enough to coat the bottom of the pan).
2-3 tablespoons olive oil
Coat chicken in flour and place in heated skillet and brown.
When chicken is brown (it won't be cooked in the middle), put in a 13x9in glass dish. Cover with foil and bake at 400 degrees Fahrenheit for an hour, or until when you stick a fork in a thick part of the chicken the juices run clear.
