Combine whole milk and lemon juice in a large pot over medium-low heat. Watch carefully. As soon as milk begins to simmer, remove from heat and let sit for 15 minutes.
1 gallon whole milk, 4 Tbsp lemon juice
Place cheese cloth (or clean, cotton tshirt) in a collander and pour milk mixture through the colander into a large bowl.
Squeeze cheese cloth to remove excess whey.
Pour whey back into pot and heat again just until it starts to boil. Remove and wait. You should get more curds from the leftover whey. Add it to your mixture and strain again
