My garden is thriving this year. We were gone for 3 weeks working and vacationing, and I was concerned that I’d come back and everything would be dead. Instead, I came home to a lushes green, overflowing garden. The girls staying at our house did an amazing job weeding, watering, and even harvesting while I was gone. Because of them, I’m going to have a good zucchini harvest. I have a few grilled zucchini recipes that I absolutely love!
I’m so excited that I can share with you my grilled paprika zucchini recipe and grilled breaded zucchini recipe. Yes, they are both cooked on the grill, making them crispy and delicious!
I’ll also give indoor options for those who don’t want to or don’t have a grill readily available.
Grilled Zucchini Recipes
I love using the grill.
Grilling means less dirty dishes and not heating up the house. It also makes food taste delicious.
One problem that people often have with zucchini is that it can become mushy. Like eggplant, it can absorb a lot of moisture and create a texture that a lot of people have difficulty with.
One way to counter the softness is to not overcook. I like to make kabobs to grill. The size that you cut everything really matters. Cut veggies that you want to keep firm into larger chunks, and things that usually take longer to soften (meat, carrots) cut thin so that everything cooks as you want it to. Zucchini should be cut thick when cut into chunks and grilled.
The exception to cutting thick chunks for kabobs is when you want to make them crispy like these recipes call for. Thinly slice the zucchini. You can use a potato peeler to achieve a thin slice. This will ensure that the zucchini gets a crispy crust. Stay over them, because they will cook quickly. You don’t want to go from crispy to burned.
Grilled Paprika Zucchini
This recipe is fast and delicious. Simply slice the zucchini, coat in olive oil, spice, and grill. Done in minutes!
Ingredients:
- 2-3 medium sized thinly sliced zucchini
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon sea salt (or to taste)
Instructions:
- Slice zucchini thinly. You can use a potato peeler.
- Drizzle with olive oil and toss to coat.
- Sprinkle with paprika, garlic powder, and salt.
- Use an oiled rag to wipe grill grate and place slices over hot grill.
- Grill for 3-5 minutes on each side or until browned, or place on greased cookie sheet and bake in oven at 400 degrees Fahrenheit until golden brown.
Grilled Breaded Zucchini
Breaded and grilled zucchini is absolutely delicious! Though breaded zucchini is often deep fried, this recipe grills them for a healthy and delicious alternative. Add homemade marinara sauce as a dip for an extra treat.
An additional option is to add shredded parmesan cheese in place of some of the breadcrumbs.
Ingredients:
- 3 thinly sliced medium sized zucchini
- 1/2 cup milk
- 2 cups breadcrumbs
- 1 tsp garlic powder
- 1 tsp sea salt (or to taste)
- 1 tsp oregano
Instructions:
- Slice zucchini thinly. You can use a potato peeler.
- Dredge each zucchini slice through the milk.
- Mix breadcrumbs, garlic powder, salt, and oregano in a separate bowl.
- Place zucchini one slice at a time in the bowl of bread crumbs and turn to coat well.
- Grill over greased grill for 5 minutes on each side, or place on greased cookie sheet and bake in oven at 400 degrees Fahrenheit until golden brown, turning once.
