Learn how to Make Homemade Marshmallows

A lot of the name brand marshmallows out there have a lot of ingredients that I don’t care for, like gmo-corn in 500 different forms and food coloring.  We were getting ready to go camping so of course we needed marshmallows to cook at the fire.  I had the time and we went ahead and made some at home.

This wasn’t the first time that we’ve made homemade marshmallows, but it was the first time that we made homemade chocolate marshmallows.  Logically (in my head), if you’re going to make smores, the more chocolate the better.

I’ve given you 3 options for marshmallows.

  • Regular marshmallows
  • Chocolate marshmallows
  • Marshmallow Cream

Homemade Marshmallows

Homemade Marshmallows with sugar (instead of corn syrup) and gelatin are a healthy alternative to store bought marshmallows.

Ingredients

  • 2 cups water, separated
  • 4 tablespoons gelatin
  • 4 cups unbleached cane sugar
  • 1/2 teaspoon salt
  • 4 teaspoons homemade vanilla extract

Instructions

  1. Dust a 9in x 13in pan with confectioner’s sugar
  2. In a small bowl, combine gelatin and 1 cup cold water. Set aside.
  3. I a saucepan, combine sugar and 1 cup water.
  4. Cook and stir over medium heat until all of the sugar is dissolved.
  5. Add gelatin and bring to a boil.
  6. When mixture begins to boil, turn off the burner and remove from heat.
  7. Pour into a large bowl and let cool.
  8. Add salt and vanilla extract.
  9. Mix with a hand mixer or stick mixer until mixture becomes frothy like beaten egg whites (usually around 10 minutes).
  10. Scrape into dusted dish and dust with additional confectioner’s sugar.
  11. Cover and place in the refrigerator until it’s no longer sticky.
  12. When ready, slice into size of your choice.

**Note:  These marshmallows do not seem to brown well when held over a flame.  They will melt and taste wonderful, but they do not become golden like store bought marshmallows (they will melt and fall off your stick before they brown).

Chocolate Homemade Marshmallows

To Make chocolate homemade marshmallows, add 1/2 cup of cocoa powder to this recipe.  I made this same recipe, but before using the mixer I divided the batch in half.  I kept half white, and put 1/4 cup cocoa powder in the other half.

**Note:  These marshmallows do not seem to brown well when held over a flame.  They will melt and taste wonderful, but they do not become golden like store bought marshmallows (they will melt and fall off your stick before they brown).

Hi. Is it possible to make this without using white sugar? Unfortunately, I react adversely to processed sugar. Thank you.

You could, but it would be whipped jello and not really marshmallows (but hey, I think it’s great and much better for you). Just use 1 cup of fruit juice per 1 oz gelatine. Make like you’re making jello except when it is starting to cool and set, whip it with a hand mixer until it is super fluffy. Gently put it in a mold and put it in the fridge. They’ll be more like fruit fluffs than marshmallows, but taste great.

Absolutely delicious! I predict s’mores tonight! Finding marshmallows without corn syrup is so hard and when I finally find them they are crazy expensive. This is the answer.
