I’ve edited and am reposting this recipe. It’s still one of our family favorites. These homemade apple streusel muffins can be make with or without the drizzle. I’ll often skip the extra sugar and just make an apple muffin for my family to eat for breakfast (and throughout the day). But if you’re wanting an extra special treat, add the drizzle. Enjoy!
I have boys who are never full. I do not even finish cleaning the kitchen before they are back asking for more food. One way I’ve learned to counteract this is to make a drawer for them in the fridge. I fill it with fruit, ready to go veggies, cheese, yogurt. I also make muffins, like these apple streusel muffins.
I bake different muffins every 4 or 5 days, fill a bowl with them, and then leave them on the counter as an anytime snack. My 9 year old eats at least 3 a day.
As a homemade muffin, this is it! Cutting up the apples is the most time consuming part, but if you have a peeler, it’s not a big deal and is SO worth the few minutes it takes to peel the apples and slice them into small pieces.
The “streusel” part of this recipe is the crumble on top. It’s DELICIOUS and a great addition.
If you’d like a muffin with less sugar, don’t make the drizzle. The muffins are amazing with or without the drizzle part. The drizzle just gives them that extra pow of sugar and yumminess as an extra special treat. If I don’t add the drizzle it’s because I know my boys are going to have multiple muffins throughout the day and I want to cut back on the sugar.
Apple Streusel Muffins Directions
I keep instructions as simple as possible. No extra steps. Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl.
In another bowl, combine the eggs, softened butter, and vanilla. Beat until fluffy.
Pour the wet ingredients into the dry ingredients and mix until combined. Don’t overmix.
Fold in the apples.
Filled greased muffin cups or muffin liners 3/4 full and then cover with the crumbly streusel before baking.
To make the streusel, combine the brown sugar, flour, cinnamon, and butter and sprinkle over the top fo the muffins.
Bake at 375 degrees Fahrenheit for 20 minutes.
To make the drizzle, combine the confectioner’s sugar, milk, melted butter, vanilla, and salt and whip until combined. After muffins are cool, drizzle the icing back and forth over the muffins and enjoy!

Apple Streusel Muffins

- 2 cups unbleached all purpose flour
- 1 cup sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 2 eggs
- ½ cup butter , softened
- 1 teaspoon vanilla extract
- 1-1/2 cups chopped, peeled apples
Streusel Topping
- â…“ cup brown sugar
- 1 tablespoon unbleached all purpose flour
- ¼ teaspoon cinnamon
- 1 tablespoon butter , softened
Drizzle
- 1-1/2 cups confectioner’s sugar
- 1-2 tablespoons milk
- 1 teaspoon butter , melted
- ¼ teaspoon vanilla extract
Instructions

Drizzle
